Inside, you'll find the beans still covered in that sugary, juicy white pulp. This pulp is super important because it has natural yeasts and bacteria that help create the chocolate's flavor later on.
3. Fermentation: Unlocking the Flavor
This is where the real magic begins! After harvesting, the beans (still in their pulp) are gathered in piles, often in wooden boxes or baskets, or sometimes laid out on banana leaves. For about five to seven days, nature gets to work. Tiny yeasts start eating the sugary pulp. As they do, amazing changes happen to the beans:

7. Grinding: Creating Chocolate Liquor
Now, these precious nibs get ground up. This can be done with stone mills or powerful steel grinders. - Cocoa Powder: The solid stuff left behind after the cocoa butter is pressed out is then ground into a fine powder. This is often used for baking or making hot chocolate.
